Shepherd's Pie

Hey y'all!! Good stuff we've got here. Ni recipe kawan. Dia belajar masak-masak kat Birmingham. Eh perlu ke nak bagitau. Anyways, selalu jugak la masak pie ni. Sedap dan mudah. Wa tak tipu lu beb!






(A) Caramelised onion
2 large onions, sliced
2 tsp sugar
Cooking oil



(B) Minced
500 g minced beef/lamb
2 sticks carrot, grated
4 cloves garlic, chopped
3 tbsp tomato puree + 3 tbsp chili boh
1 tsp english mustard or any kind of mustard would do :) kadang-kadang tak letak pun
1 cup beef stock
2 sprigs rosemary, chopped. Kalau takde fresh ones, those dried ones yang dalam botol kecik-kecik tu pun boleh
2 sprigs thyme, chopped. Dried ones pun boleh.
A couple of bay leaves. Bukan bay watch, tapi bay leaves.
1 tbsp cornstarch + 3 tbsp water (dilute flour or else u will get lumps) 
And oh cooking oil of course or olive oil or wtv u care to use haha

(C) Mashed potatoes
1.5kg potatoes, peeled and boiled
A knob of butter
A splash of milk and cream. Nak splash dua tiga kali pun boleh.
Parmesan cheese, grated. Banyak mana, ikut suka. Ikut lah hati dan perasaan. Tepuk dada tanya selera.



Are you ready to start cooking? Sure you are!! *perky*

A) Caramelise your onions:
1. Heat oil in pot, then throw in your sliced onions. 
2. Add in sugar, stir well.
3. Keep stirring.
4. Yeah sister, keep on stirring. Masak sampai onions tu macam nak hangus sikit. Macam je. Jangan sampai hangus betul-betul. Nanti pahit. Tak sedap.
5. Put aside.


B) Make your minced beef:1. Heat oil in pot, once pot is hot put in your good ol' minced. Get some color on it. Tapi jangan sampai completely cooked.
2. Add in your grated carrots and chopped garlic. Sweat those lovely veg until you get some smell from it. Ewah.
3. Add in tomato puree, cili boh, and mustard at the same time. Mix well with the minced.
4. Pour in your stock and herbs, let it simmer and leave it to reduce by half. 
5. Agak-agak dah kurang separuh liquid kat dalam pot tu, bring your minced to a boil and pour in cornstarch and water mixture. Let it boil again. This process is just to make it thick.


C) Mash your potatoes:
Well, there's nothing much to explain here. Just boil 'em and mash 'em. But here's a good trick: masa tengah mix with cream and butter tu, do it while being heated on the stove (not you; the potatoes). Helps make the mashed potatoes smooth. Or so I was told lah. Tapi proven potatoes tu lagi semooth. Se-moooooth.


D) Bring it together now!:
In a baking dish, put in your minced and caramelised onion, and mix. Then spread your mashed potatoes on top, cover the minced completely. Tabur-taburkan grated parmesan on top, biarkan dia bertebaran di atas potato seperti pasir di tepi pantai.
Bake it! Pre-heat oven dulu, then bake at 180 degrees for app. 15-20 minutes, or until atas tu dah brown. Rajin-rajin lah check; janji atas tu dah brown, boleh bawak keluar dan makan.

Note: measurements are not really precise. Kalau agak-agak terkurang ke terlebih ke, adjust la ikut citarasa anda. Selamat mencuba! Semoga bahagia!
