Seaweed Soup


Recipe ni sebenarnya ikut recipe Korean-style seaweed soup from allrecipes.com tp kitorang improvise sikit2 hehe. Tryla. Sedap dimakan di waktu cuaca dingin dan angin menderu2 bagaikan dunia dia yang punya. Wa tak tipu lu beb!

Bahan-bahan:

Beberapa ketul beef ikut suka- minced
Beberapa keping seaweed- kitorang main belasah guna seaweed for sushi tu dalam 5keping
1 clove garlic- minced
Veges- kitorang selalu letak carrots, mushrooms and tomatoes
2 teaspoons sesame oil
1 1/2 tablespoons soy sauce- kitorang campur light soy sauce, dark soy sauce dengan kicap cap kipas udang sekali
1 teaspoon salt
6 cups water

Cara-cara:
  1. Soak seaweed sekejap sampai dia lembut sikit. Gunting square2 kecik2 or suka hati lah nak bentuk apa pun.
  2. Panaskan periuk, masukkan sesame oil, beef, 1/2 tablespoon soy sauce dengan sikit garam. Kacau sampai daging cm dh masak. Dalam 1-2mins.
  3. Masukkan seaweed dgn lebihan soy sauce td. Kacau sekejap dlm 1-2mins gak. Pastu masukkan 2 cups air. Didihkan.
  4. Masukkan garlic, the veges dengan lebihan air. Tomato kalau suka fresh nanti dah nak masak baru masukkan. Didihkan pastu tutup. Simmer for 20mins.
  5. Letak garam kalau tak masin. Dah siap!
Senang je kan? Memang pun. Measurements tu tak accurate sangat so ikut suka je nak letak berapa2 and apa2. Selamat mencuba!


Pavlova

Hello everybody! Since Chef Lee pemalas and nak tunggu kena dethroned baru dia nak update, bak sini saya update dulu. Ok pavlova ni originates frm Australia. Basically it's just meringue, topped with whipped cream and fresh fruits. Tapi still sedappp. Wa tak tipu lu beb!

Ingredients:

4 egg whites
1 1/4 cup of caster sugar
1 teaspoon vinegar
1 teaspoon vanilla essence
1 tablespoon cornflour

Methods:
  1. Preheat the oven to 180°C.
  2. Beat the egg whites with an electric mixer sampai stiff.
  3. Add in the caster sugar sikit2. Jangan tuang sekali harung.
  4. Beat on high speed for 10minutes. Mesti kena 10minutes k?
  5. Mix together vinegar, vanilla essence and cornflour and add into the mixture. Beat for another 4minutes sampai jadi mcm ni.
6. Spread the mixture on a baking tray lined with wax paper and buat mcm bentuk cake.
7. Turn the oven's temperature down to 100°C and pop the baking tray in.
8. Bake for an hour and leave it in the oven to cool.
9. Dah sejuk, keluarkan and taruk whipped cream on top, susun strawberries or any fruits yang awak suka. Dah siap!!




Recipe ni macam a bit sweet la but bila makan dgn strawberries dia macam balance so sedap! Hehe. Luar dia crunchy and the inside macam marshmallow. Go try it. It's really easyyyy.

Shepherd's Pie

Hey y'all!! Good stuff we've got here. Ni recipe kawan. Dia belajar masak-masak kat Birmingham. Eh perlu ke nak bagitau. Anyways, selalu jugak la masak pie ni. Sedap dan mudah. Wa tak tipu lu beb!






(A) Caramelised onion
2 large onions, sliced
2 tsp sugar
Cooking oil



(B) Minced
500 g minced beef/lamb
2 sticks carrot, grated
4 cloves garlic, chopped
3 tbsp tomato puree + 3 tbsp chili boh
1 tsp english mustard or any kind of mustard would do :) kadang-kadang tak letak pun
1 cup beef stock
2 sprigs rosemary, chopped. Kalau takde fresh ones, those dried ones yang dalam botol kecik-kecik tu pun boleh
2 sprigs thyme, chopped. Dried ones pun boleh.
A couple of bay leaves. Bukan bay watch, tapi bay leaves.
1 tbsp cornstarch + 3 tbsp water (dilute flour or else u will get lumps) 
And oh cooking oil of course or olive oil or wtv u care to use haha

(C) Mashed potatoes
1.5kg potatoes, peeled and boiled
A knob of butter
A splash of milk and cream. Nak splash dua tiga kali pun boleh.
Parmesan cheese, grated. Banyak mana, ikut suka. Ikut lah hati dan perasaan. Tepuk dada tanya selera.

A) Caramelise your onions:
1. Heat oil in pot, then throw in your sliced onions. 
2. Add in sugar, stir well.
3. Keep stirring.
4. Yeah sister, keep on stirring. Masak sampai onions tu macam nak hangus sikit. Macam je. Jangan sampai hangus betul-betul. Nanti pahit. Tak sedap.
5. Put aside.


B) Make your minced beef:1. Heat oil in pot, once pot is hot put in your good ol' minced. Get some color on it. Tapi jangan sampai completely cooked.
2. Add in your grated carrots and chopped garlic. Sweat those lovely veg until you get some smell from it. Ewah.
3. Add in tomato puree, cili boh, and mustard at the same time. Mix well with the minced.
4. Pour in your stock and herbs, let it simmer and leave it to reduce by half. 
5. Agak-agak dah kurang separuh liquid kat dalam pot tu, bring your minced to a boil and pour in cornstarch and water mixture. Let it boil again. This process is just to make it thick.


C) Mash your potatoes:
Well, there's nothing much to explain here. Just boil 'em and mash 'em. But here's a good trick: masa tengah mix with cream and butter tu, do it while being heated on the stove (not you; the potatoes). Helps make the mashed potatoes smooth. Or so I was told lah. Tapi proven potatoes tu lagi semooth. Se-moooooth.


D) Bring it together now!:
In a baking dish, put in your minced and caramelised onion, and mix. Then spread your mashed potatoes on top, cover the minced completely. Tabur-taburkan grated parmesan on top, biarkan dia bertebaran di atas potato seperti pasir di tepi pantai.
Bake it! Pre-heat oven dulu, then bake at 180 degrees for app. 15-20 minutes, or until atas tu dah brown. Rajin-rajin lah check; janji atas tu dah brown, boleh bawak keluar dan makan.

Note: measurements are not really precise. Kalau agak-agak terkurang ke terlebih ke, adjust la ikut citarasa anda. Selamat mencuba! Semoga bahagia!

Nasi Dagang

Apa khabar semuaaaaaa? Kitorang baru lepas masak nasi dagang. Sedap!!! So marilah tengok camne buat dia k? Nnti you allzz boleh la try. Kalau ikut betul2 dan dengan sabar, akan terhasillah nasi dagang yang enak! Tapi simple je sebenarnya. Wa tak tipu lu beb~~!

Nasi Dagang



Bahan-bahan:
2cawan beras basmathi
1/2 cawan beras pulut
1/2 cawan beras unpolished (kitorang takde benda ni so kitorg lebihkan beras pulut to 3/4)
santan cair
santan pekat
1 ulas bawang merah (yang besar tu, hiris halus2)
1 or more inci halia (hiris halus2 panjang2)
1 sudu kecil halba
garam

Cara-cara:
  1. Gaulkan semua jenis beras tu and rendam dalam air semalaman or atleast 6hours.
  2. Lepas dah rendam, toskan air dia and kukus beras tu sampai setengah masak. (agak2 dalam 10minit)
  3. Angkat bekas yang mengandungi beras tu, gaulkan dgn santan cair. Jangan tuang semua sampai bertakung dalam bekas tu k? Just gaul2 je agak2 rata. Pastu kukus balik sampai dia masak. Rajin2 la check lepas dah 15-20minit kukus tu tengok dah masak tak. Kalau rasa mcm kering tu takpe. Yang penting masak. Itu yang kita mahu.
  4. Lepas dah masak, gaul dengan santan pekat, bawang, halba, halia and garam. Kukus lagi sampai bahan2 tu semua masak/layu.
  5. Agak2 dah masak, try rasa nasi tu. Kalau macam kering ke apa, tambah air panas sikit. Sikit je. Pastu kukus balik sekejap. Kalau kurang lemak, tambah santan. Kurang garam, tambah masin. Senang je. Ok dah siap.


Gulai Ikan



Bahan-bahan:
Potongan ikan tongkol/ikan tenggiri berapa2 banyak pun tak kisah. (kitorang ada ikan kembung je so kitorang masak 3 ekor)
1 biji bawang merah besar
1 ulas bawang putih
1 inci kunyit hidup/ 3/4sudu besar serbuk kunyit
1 inci halia (hiris halus)
2 inci lengkuas (kitorang tak guna sebab kat UK takde lengkuas Malaysia je ada)
2 cawan santan pekat (kitorang guna less than that kot. Nanti sakit jantung makan santan banyak2)
Cili kering ikut suka nak pedas mana
2 sudu makan kerisik
3 keping asam keping
Minyak
Garam
Gula
Air

Cara-cara:
  1. Rebus ikan dengan asam keping and garam sikit. Air tu jangan banyak sangat, agak2 cover ikan tu. Rebus sampai air dia dah takde/pekat/tinggal sikit.
  2. Kisar cili kering (rebus dulu k), bawang merah, bawang putih dgn serbuk kunyit/kunyit.
  3. Tumis dengan minyak. Agak2 dah naik bau or pecah minyak mana2 la yang awak suka, masukkan kerisik, halia and lengkuas. Gaul pastu masak sampai bau dia macam sedap and rupa dia pun macam sedap.
  4. Masukkan santan, didihkan. Dah mendidih baru masukkan ikan dengan sisa2 air rebusan tu kalau ada.
  5. Masukkan garam and gula kalau nak. Gaul-gaul sikit, biar masak kejap pastu tutup api. Dah siap!
Acar



Bahan-bahan:
Timun
Carrot
Bawang merah
Cili merah
Cuka
Gula
Garam

Cara-cara:
  1. Potong timun dengan carrot tu memanjang atau rectangle atau camne yang korang selalu tengok orang buat acar.
  2. Hiris cili dengan bawang tu pun ikut suka hati and creativity cewah.
  3. Gaul dengan cuka, gula and garam. Rajin2 merasa k sebab nanti kalau tak sedap korang gak yang menyesal.
  4. Ok dah siap.
